人参果(Ciku) 是小女子最喜欢吃的水果只一。。最近迷上做蛋糕卷的我。。似乎什么水果都想拿来卷个饱。。无意中在刚买回来不久的食谱"Baking With Fruits"里。。有一道蛋糕卷是用我喜爱的Ciku来做食材。。觉得很新奇。。就好奇的动手弄一弄。。
人参果蛋糕卷(不成功版) ~ Ciku Roll Cake
食谱参考:Baking With Fruits

蛋糕材料(依照之前Japanese Roll Cake而改量):
蛋黄面糊
3粒 蛋黄(Egg Yolk)
20g 细砂糖 (Sugar)
45g (3tbsp) 低粉 (Cake Flour)
1tbsp 可可粉 (Cocoa Powder)
25ml (1tbsp+2tsp) 牛奶 (Milk)
蛋白霜
3粒 蛋白 (Egg Whites)
30g 细砂糖 (Sugar)
1/4 tsp 塔粉 (Cream of Tartar)
蛋糕制造过程:
蛋黄面糊
3粒 蛋黄(Egg Yolk)
20g 细砂糖 (Sugar)
45g (3tbsp) 低粉 (Cake Flour)
1tbsp 可可粉 (Cocoa Powder)
25ml (1tbsp+2tsp) 牛奶 (Milk)
蛋白霜
3粒 蛋白 (Egg Whites)
30g 细砂糖 (Sugar)
1/4 tsp 塔粉 (Cream of Tartar)
蛋糕制造过程:
1) 10"x10"square cake mould with parchment paper , prehead oven 170*C
2) Egg Yolk + Sugar beat with whisk till pale colour. Sift in Flour + Cocoa powder.. mix well... add milk... mix well and set aside

3) Egg Whites beat with mixer till bubble.... add in cream of tartar... divide into 3 times add in sugar... beat till stiff peak
4) scoop some of the whites batter into the yolks batter... fold in mix well... then pour back into the whites... fold in mix well
5) pour batter into the cake tin.. spread evenly...
6) bake with 170*C, upper-lower flame for 10 mins
7) remove from mould and tear off paper immediately after baking.. place the cake on wired rack let cool..
人参果内馅材料:
300g 人参果肉-去籽切块(Ciku flesh-diced)
50ml 水(water)
2tsp 鱼胶粉(gelatine powder)
1tbsp 柠檬汁 (Lemon Juice)
150g 鲜奶油(UHT Whipped Cream)
人参果内馅制造过程:
1) Cook ciku with water and gelatine on low flame till gelatine is melted.. set aside let slightly cool... fold in lemon juice..
300g 人参果肉-去籽切块(Ciku flesh-diced)
50ml 水(water)
2tsp 鱼胶粉(gelatine powder)
1tbsp 柠檬汁 (Lemon Juice)
150g 鲜奶油(UHT Whipped Cream)
人参果内馅制造过程:
1) Cook ciku with water and gelatine on low flame till gelatine is melted.. set aside let slightly cool... fold in lemon juice..
2) whip the cream and mix together with the ciku

Note: 是我的做法有问题。。导致蛋糕不成功。。不关这食谱的事。。这食谱是用模型来摆然后让里面的内馅set的。。根本就不适合用来直接卷。。而我是直接用来卷。。 :(
不过这口味的配搭很不错哦。。虽然丑丑的。。可是还很好吃一下哦~~
下次如果再做的话。。一定要留意几点:人参果一定要买熟透的不然会苦涩。。如果要拿来卷的话。。可以直接酱果肉切块卷起开就可以了。。不用煮。。
